Pumpkin Protein Pancakes


Let us just start off with Mikey my boyfriend actually liked these! I usually make things to plain or "healthy" for him but these were Mikey approved. I don't like the taste of eggs (yolks) especially cooked at all. I'm talking scrambled egg style. This is a perfect way for me to hide them in my food while still getting the nutritional benefits.

Ingredients

1 or 2 whole egg

1/4 cup canned pumkin

1/2 scoop protein powder (vanilla)

1/4 - 1/2 cup oats

1/4 tsp baking powder

cinnamon or pumpkin pie spice

If you are making for more than one person double the ingredients, they don't have to be perfectly measured just make sure you have a good consistency so you can spread or pour it in the frying pan to cook!
