Gut Friendly Protein Gluten Free Cookies



These cookies are more like a little snack as all the ingredients are very healthy. They taste good and are also GLUTE FREE. Just don't cook them too long as they will dry out.
Gut Healthy Star ingredients:
Collagen contains and amazing 19 amino acids. It helps builds muscle and helps repaid GI lining. It's glycine content helps with insomnia, anxiety, joints, hair, and skin as well.
Coconut oil is a great healthy dose of saturated fat. It's one of favorite choices for a healthy fat option with foot. It is easy to digest as it requires no pancreatic enzymes for digestion. Coconut oils antimicrobial and anti-inflammatory properties of coconut help support and clean your GI system.
Ingredients:
1 banana
1/3 cup pumpkin puree (I used canned organic)
1/2 cup coconut oil, melted
1/3 cup coconut butter, softened + 2 tablespoons for drizzle after they are finished baking
1/2 cup coconut flour
1/2 cup collagen peptides (I used Vital Proteins

3 tablespoons maple syrup
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon vanilla extract
1/2 cup raw cacao nibs or pecans (optional)
Pinch sea salt
I added a few dark chocolate pieces to a few cookies to test it out! Made it extra chocolaty, Mikey liked that! The cocoa nibs were enough for me in it though.
Preheat oven to 350°F. Combine all ingredients in the order listed above until well-combined. Line cookie sheet with parchment paper. Form dough into 12 mounds about 2 inches in diameter, and place onto lined sheet. Bake for 20-24 minutes.
Cool at least 10 minutes, then drizzle the remaining 2 tablespoons coconut butter on top!!
