Paleo Chocolate Chip Zucchini Bread
I first tried a version of this recipe after seeing it on the Downshiftology blog. I loved it so much. Such a nice little healthy gluten free treat! I added a few ingredients of my own to this recipe to make it extra yummy!
After I bake it and have a large taste...lol I freeze the rest in a glass dish to save as a little treat for later. If you don't plan on eating within the next few days best to freeze for later.



Ingredients:
1/2 cups almond flour
1/2 cup tapioca flour
1/4 cup coconut flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 tbls chia seeds
3 tbls cocoa nibs
3 eggs
1/2 cup applesauce
2 tbsp maple syrup
1 tbsp apple cider vinegar
1 1/2 cups grated zucchini
Preheat to 350 degrees .
I used standared loaf pan to cook bake for 20mins cooking time may vary. stick a tooth pic or knife in to check the center make sure it comes out clean
